Brief description of the activities to be carried out
ProCerealTech focuses its activity on designing products with high sensory and nutritional quality based on cereals/grains that contribute to improving the population's diet. Its activities are structured around four pillars: 1) Development of food products for populations with special needs, particularly gluten-free products; 1) Valorisation of by-products rich in bioactive substances and of high nutritional interest; 3) Characterisation of ingredients and products; 4) Physical modification of flours/grains to modulate their technological functionality.
